Enmoladas

Enmoladas are very popular at celebrations and gatherings as they are a reflection of the deep and traditional flavor of Mexican cuisine. Enmoladas consist of folded or rolled corn tortillas, filled with juicy chicken breast or in a vegetarian version they are filled with stewed potatoes, mushrooms or beans. They are bathed in mole, a rich and complex sauce.
